Are Goji Polysaccharides the Same as Sugar?

The word “polysaccharide” contains the word “saccharide,” which can understandably cause confusion. However, goji polysaccharides are not the same as adding table sugar to a product.

Table sugar is mainly sucrose, a relatively small carbohydrate molecule that tastes distinctly sweet. Polysaccharides are much larger and more complex structures made from many connected units.

Goji fruit naturally contains different carbohydrates, including naturally occurring sugars and polysaccharides. These are all part of the fruit’s natural composition, but they are not chemically identical and do not perform exactly the same roles.
